サクサク (sakusaku) is the Japanese onomatopoeia for a light, dry, crisp crunch. Bite into a piece of tempura, a fresh cookie, a buttery piecrust, or a shrimp cracker — the moment of snap-and-shatter you hear (and feel) is サクサク. It is the dry opposite of モチモチ (chewy) and the gentle cousin of バリバリ (a louder, harder crunch).

Unlike many onomatopoeia, サクサク is one of the rarer cases that works as both a giongo (擬音語, actual sound) and a gitaigo (擬態語, state/manner). You can literally hear it with tempura and cookies, but it also extends into a metaphor for smooth, fast progress.

When to Use サクサク

Use サクサク in two main ways: (1) Crispy food texture — the default descriptor for tempura, fried chicken, cookies, crackers, croissants, and thin pastries 「サクサクの食感」(sakusaku no shokkan). (2) Smooth, efficient progress — 「仕事がサクサク進む」(shigoto ga sakusaku susumu, work is moving along crisply), 「サクサク動くパソコン」(sakusaku ugoku pasokon, a snappy, fast computer). This second meaning is extremely common in workplace and tech-review contexts. Compare with カリカリ (karikari, a harder, drier crunch like toast) and パリパリ (paripari, a thinner, higher-pitched snap like nori or chip skin).

The tech meaning has become so dominant that Japanese laptop and smartphone reviews routinely use サクサク as the single most important quality metric. A review saying 「サクサク動く」(“it runs smoothly”) is the highest praise a consumer Android phone can get — higher than any spec-sheet comparison. You will see the word splashed across box art for mid-range phones, PC ads, and even web-browser marketing. A humble tempura-crunch sound turned into the Japanese tech industry’s go-to performance adjective.
